The kinds of Noodles in Nusantara

The popularity of Mie Bakso,Mie Ayam, and Kwetiau's has spread widely across Nusantara. There are other Noodles that haven't gained nation wide popularity, but it;d be a shame if you haven't tried, or at least known about, these local prides.

1. Laksa Pengantin
    from DKI Jakarta
    - it;s part of the traditional betawi wedding ceremony and serves as proof that the bride is able to cook and serve laksa pengantin.
    - topped with a kind of basil leaves (kemangi)



2. Mie Aceh
    from Nanggroe Aceh Darussalam
    - its strong curry taste comes from ginger, cardamom, turmeric, fennel, and cumin
    - Served with emping ( gnetum gnemon cracker ), pickled cucumber, and lime.



3. Mi celor
    from Palembang
    - Celor means soaked in hot water, not boiled. Both the noodles and bean sprouts used in this dish are only soaked in hot water. This way, the noodles don't get too soft. Afte being soaked, the two ingredients are placed in a bowl. Thick shrimp soup is pored on them.



4. Soto Banjar
    from Banjar, South Kalimantan
    - Seved with potato patty ( perkedel kentang ), and also with slices of rice wrapped in banana leaves ( lontong or ketupat )
    - Kenari nuts are an ingredient of the soup.



5. Mie Sagu
    from Pontianak
    - The Noodles are made from sago ( sagu )
    - The dish is topped with friend anchovies and fried peanuts



6. Mie Cakalang
    from Manado
    - One of the ingredient is skipjack/tuna ( cakalang )
    - There are two kinds of chili paste used in mie cakalang : one is made from green chili pepper, Vinegar, water and salt, and the other is made from red chili pepper, ginger, vinegar, water and garlic.


7. Mie Kering Makassar / Mie Titi
     from Makassar
     - Noodles are deep fried in cooking oil until crispy. Then thick gravy and sliced chicken, liver, vegetables, and seafood are added. The dish is pretty similar to the chinese I Fu Mie.
     - Why is mie keriting makassar also known as mie titi? Once a man of chinese descent in makassar sold this dish and after he died, he passed this family recipe to his three children : Hengky, Awa', and Titi. Among the three children, Titi's noodles shop was the most popular.
